Tarte tatin with onions, sweet potatoes and butternut squash

Ingredients
1 red onions and 1 white onions
1 sweet potato
Half of butternut squash
1 ready made puff pastry (round shaped)
1 knob of butter
1 drizzle of olive oil
1 table spoon of sweet soy sauce
1 drizzle of runny honey
teaspoon of roaster sesame seeds
I got such lovely feedback from my leek and sweet potatoes tarte tatin recipe, that I decided to try another autumn tarte tatin with layers of onions, sweet potatoes with butternut squash, glazed in sweet soy and honey.
Preparation for onions, sweet potato and butternut squash tarte tatin (upside-down tart)
Preheat the oven at 200 °C.
Slice the onions, the sweet potato and butternut squash in fine slices.
In a deep pan that can go in the oven, melt a knob of butter, add a drizzle of olive oil and runny honey, a table spoon of sweet soy sauce. Place the onions in the pan, allow them to simmer for a minute or two. Then cover them with the slices of sweet potatoes, then the slices of butternut squash add some salt and pepper. Lastly, cover the vegetables with the pastry, tuck the side down and scarify the pastry (just a few small cuts).




Now put the pan in the oven for 25 minutes.
Once it is lovely and golden, flip it on a plate, sprinkle some grilled sesame seeds and serve.
