Banana Bread with Pecan & Chocolate recipe

Deliciously moist Banana Bread

Ingredients

150 gr all-purpose flour

50 gr coconut blossom sugar

25 gr light brown sugar

1 teaspoon baking soda

1 teaspoon salt

3 or 4 very ripe bananas

55 gr of plain yogurt (nonfat or regular)

2 large eggs

60 ml of vegetable oil

2 teaspoons vanilla extract

1 handful of pecans and/or chocolate chips

I suspect I buy bananas just to make banana bread instead of healthy fruit bowls. This recipe does not require any butter so you can add the chocolate and not feel guilty at all. You can also enjoy the Banana and Chia seeds bread, you will find this recipe just as moist and delicious I hope.


Preparation for Banana Bread with Pecan & Chocolate recipe

Preheat the oven at 175° C.

In a bowl, you first mix all the dry ingredients, the flour, both sugars, baking soda and salt.

Then in your blender, you blend the rest of the ingredients: the bananas, the yogurt, the eggs and vanilla extract.

Then you blend them together and mix it well and add the pecan and chocolate chips (optional).

Place the mixture in a loaf pan with parchment paper inside and bake for 50 minutes until done. You can test with a toothpick, if when inserted it comes out clean, it’s baked and ready to eat. It is best to let it cool down if you can.
