Prep Time

1h30min

Cook Time

5 min

Servings

4

Ingredients

700 gr of frozen raw peeled prawns

2 eggs

2 spring onions

2 tbsp mustard (Dijon)

Juice of half a lemon

Lemon zest

2 tsp chili sauce

Salt

Pepper

130 gr of Panko breadcrumbs

Olive oil

Put 250 gr of the prawns into a food processor and pulse to obtain a smooth paste.

Chop the rest of the prawns into small pieces.

Then in a bowl, add these ingredients:

  • the chopped prawns
  • the prawn paste
  • 2 beaten eggs
  • 2 finely chopped spring onions
  • the mustard
  • lemon juice
  • lemon zest
  • chili sauce
  • 50 gr of Panko
  • salt and pepper

Now it’s time to make your patties, about 5 to 8 cm in diameter, depending if you are serving them as starters or main. Coat them with Panko. Lay them out on a tray and cover them, put them in the fridge for 1 hour.

Once they are firm, heat the olive oil in a frying pan and as soon as it is hot fry the patties by batches. Make sure they are golden brown, this means approximately 4 minutes each side.

Serve your prawn patties with homemade tartar sauce

Wet your hands with cold water before handling the mixture, this will prevent it from sticking to your fingers
